
“I have always found great joy in experiencing the aromas, flavors, and textures of new foods. One of my favorite cuisines is Japanese, and I often wondered how to introduce new elements to it. To find the answer, I traveled to many countries, visiting diverse restaurants to taste and study what sets them apart. Through this journey, I worked hard to discover my own unique flavor, and now, I have finally created my kitchen.
At the age of 24, I immigrated to the United States. Over the past eight years, I’ve immersed myself in diverse cuisines and cultures, which inspired me to build my own kitchen. Here, I am committed to offering you a special meal and a memorable day.
The word ‘INE’ means rice plant. In Korea, where I grew up, there is a saying: “The more rice ripens, the lower it bows.” This reflects the importance of humility, and I promise to always welcome my guests with a humble heart as I strive to become a better chef.
